Ingredients

- 4 chicken breasts
- 1 cup of cherry tomatoes
- 1/3 cup of Kalamata olives
- 1/4 cup of white wine
- 3 fresh oregano
- 2 tablespoons of onion, diced
- 1 garlic clove, minced
- 1/2 teaspoon of black pepper
- 1 teaspoon of salt
- 8 teaspoons of olive oil
- 2 tablespoons of Feta cheese (optional)
- 1/4 cup of chicken stock (optional)
- 1 tablespoon of arugula micros
(you may replace arugula micros with any preferred herbs, like basil for example)
Step-by-step

Start by seasoning 4 chicken breasts with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Heat 4 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side, or until cooked through.

Remove the chicken from the pan, add the rest of the olive oil, onion, garlic, and stir for about 1-2 minutes, then add the wine.

Once the wine reduces slightly, add the cherry tomatoes stirring for another 2-3 minutes.

Next, return the chicken back to the skillet, add the Kalamata olives, fresh oregano, and a pinch of salt. If you prefer a juicier plate, feel free to add 1/4 cup of chicken stock. Cover the skillet, and cook for another 5 minutes at a medium-low heat.

Garnish with fresh arugula micro-greens or your preferred herbs. Optionally, sprinkle the crumbled feta cheese over the chicken before serving.
