Quantity: 1110g (2.45 lb) of dough

Cook time: 10 min

Difficulty: easy

Ingredients

  • 500g flour
  • 350g butter
  • 200ml ice cold water with 2 ice cubes
  • 1 egg
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon vinegar

Step-by-step

1

Begin by grating cold butter using a large grater, then place it in the freezer while you prepare the other ingredients. It’s essential to keep the butter cold throughout the process, so it’s recommended to store it in the freezer before and after grating.

2

Measure out 500g of flour and place it in a mixing bowl along with the salt and sugar.

3

In a separate bowl, combine all the liquid ingredients: ice-cold water with two ice cubes, the egg, and vinegar.

4

Retrieve the grated butter from the freezer and add it to the flour mixture. Use a spatula to gently combine the ingredients.

5

Once the flour and butter are well combined, add the liquid mixture, and mix shortly keeping the butter cold.

6

Then use your hands to gently combine the ingredients further, until a dough forms. Again, being careful not to over-mix and warm up the butter.

7

Once the dough comes together, fold and wrap it in plastic wrap and refrigerate it for at least 2 hours before using. This chilling time allows the dough to rest and the flavors to develop.

Just remember to keep the butter cold throughout the process for the best results, and you’ll be able to use it for different pastry recipes, like these flaky and delicious Mini Apple Tarts or Savory Mushroom Pastry Tarts.
