Serves: 8

Cook time: 45 min

Difficulty: easy
Ingredients

- 300g puff pastry
- 100g broccoli (cooked)
- 300g salmon (cooked)
- 3 large eggs
- 100g Feta cheese (grated)
- 400ml cream
- Chives
- Pinch of salt
Step-by-step
1
Start by preheating your oven to 400°F (200°C) while you clean the broccoli. Cut the broccoli into florets and cook them in boiling water for about 3 minutes until tender. Drain and set aside to cool.
2
If you’re using fresh salmon, steam the salmon steak until it’s cooked through, or alternatively, you can use smoked salmon. Allow the cooked salmon to cool before cutting it into bite-sized pieces.

3
In a mixing bowl, whisk together the eggs, cream, grated cheese, and salt, until well combined.

4
Roll out the shortcrust pastry on a baking dish and prick it all over with a fork. Evenly distribute the salmon pieces and broccoli florets over the pastry.

5
Pour the egg mixture over the salmon and broccoli, ensuring it’s evenly distributed. Sprinkle some chopped chives on top for added flavor.

6
Bake the quiche in the preheated oven for approximately 30 minutes, or until the edges are golden brown.

This recipe is not only easy and quick to prepare but also incredibly delicious! Give it a try — you won’t be disappointed!
