Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 3 cucumbers
  • 5 tomatoes
  • 3 green onions
  • 3 tablespoons olive oil

  • Handful of parsley
  • Juice of 1 lime

Step-by-step

Start by cooking the quinoa. Add the quinoa, water, and a pinch of salt to a saucepan. Bring to a boil, then reduce the heat to low and cook for 20-25 minutes, or until the water is absorbed. Set aside and let it cool completely.
