Ingredients

For the crust
- 1 cup butter, room temperature
- 1 egg
- 3 cups flour
- 3 tablespoons granulated sugar
- 1/2 teaspoon salt
- Zest of one lemon
For the filling
- 2 pounds blueberries
- 1/4 cup corn starch
- 2/3 cup granulated sugar
- Juice of half a lemon
- Zest of one lemon
- 1 tablespoon powdered sugar
Step-by-step

To prepare the crust, in a large mixing bowl combine the flour, granulated sugar, salt, and lemon zest.

Add the room temperature butter and the egg, then mix until the dough comes together and can be shaped into a ball.

Wrap the dough in plastic wrap, and refrigerate for at least 1 hour.

To prepare the filling, combine in a large bowl the blueberries, corn starch, granulated sugar, lemon juice, and lemon zest. Mix gently until the blueberries are evenly coated.

To assemble the pie, preheat the oven to 400°F (200°C).

Then, roll out the dough on a floured surface to fit your pie dish, leaving an overhang around the edges.

Transfer the rolled-out dough to the buttered and floured pie dish and press it gently into place.

Pour the blueberry filling into the crust, spreading it out evenly. Fold the edges of the pie dough in towards the center as you go around.

Finally, bake the pie in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
