Ingredients

- 300g feta cheese
- 300g cottage cheese
- 250g butter
- 4 tablespoons sour cream
- 1 egg
- 450g flour + 50g for dusting
- 1 tablespoon baking powder
- 130g sesame seeds
- Coarse salt
Step-by-step

In a large mixing bowl, grate the feta cheese. Add the cottage cheese, sour cream, and butter. Mix until just combined.

Add the flour and baking powder, mixing well until a dough forms.

Wrap the dough in plastic wrap and refrigerate for one hour.

After an hour, remove the dough from the fridge and roll it out on a floured surface to a thickness of about 1.3 inch (3mm). Shape the dough into a rectangle.

Beat the egg and brush it over the surface of the dough. Sprinkle coarse salt and sesame seeds evenly over the entire surface.

Using a sharp knife or a pastry cutter, cut the dough into strips that are 1 inch (2.5cm) wide and 6.5 inches (17cm) long.

Place the strips on a baking tray and bake in the oven at 400°F (200°C) for about 25 minutes, or until golden brown.

Repeat the process with the remaining dough. You may need to repeat the process about three times, depending on your baking tray’s dimensions. Mine was 14.6 inches (37 cm) by 21.65 inches (55 cm).
