Ingredients

  • 3 ripe bananas
  • 3 eggs
  • 2 cups (480g) peanut butter
  • 1 cup (100g) almond flour
  • 2 cups (180g) quick oats
  • 3 tablespoons (45ml) maple syrup
  • 1 tablespoon (15g) baking powder
  • 1 cup (175g) chocolate chips
  • 1 cup (120g) sliced almonds

Step-by-step

1

Preheat your oven to 375°F (190°C). Grease and line a 8×8-inch (20×20 cm) square baking pan.

2

In a large bowl, add the ripe bananas, the eggs, vanilla, and the maple syrup.

3

Using an immersion blender, mix well until smooth, then add the peanut butter and keep mixing until well combined.

4

In a separate bowl, mix together the almond flour, quick oats, and baking powder.

5

Add the dry ingredients to the wet ingredients, stirring until just combined, then fold in the chocolate chips until evenly distributed throughout the batter.

6

Pour the batter into the prepared baking pan and spread it out evenly with a spatula.

7

Sprinkle the sliced almonds evenly over the top of the batter.

8

Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

9

Allow the cake to cool in the pan for about 10 minutes before transferring to a serving plate. Serve cool.
