  • 4/5 gallon (3L) water
  • 1 tablespoon salt
  • For the Sauce
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (30g) butter
  • 1/2 cup (120ml) white wine
  • 2 cups (300g) cherry tomatoes, halved
  • 1 cup (240ml) whipping cream
  • 1/2 cup (120ml) fish or chicken broth
  • Fresh parsley, chopped, for garnish
  • Salt and pepper, to taste

Step-by-step

Start by preparing the sauce. Heat the butter and olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes until softened and fragrant.

Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally.

Deglaze the pan with white wine, stirring well to loosen any browned bits. Let it simmer for 2-3 minutes to slightly reduce.

Add in the fish or chicken broth and simmer for about 5-6 minutes or until all the tomatoes releases the juices.

Stir in the whipping cream and simmer for 3 more minutes, allowing the sauce to thicken slightly. Season with salt and pepper to taste.

Using an immersion blender, purée the sauce until smooth, then strain it to achieve a velvety texture. Keep the sauce warm over low heat while you cook the tortellini.

Meanwhile, bring the water to a boil in a large pot. Add the salt and cook the lobster tortellini according to the package instructions. Drain and set aside.
