- 4/5 gallon (3L) water
- 1 tablespoon salt
- For the Sauce
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons (30ml) olive oil
- 2 tablespoons (30g) butter
- 1/2 cup (120ml) white wine
- 2 cups (300g) cherry tomatoes, halved
- 1 cup (240ml) whipping cream
- 1/2 cup (120ml) fish or chicken broth
- Fresh parsley, chopped, for garnish
- Salt and pepper, to taste

Start by preparing the sauce. Heat the butter and olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes until softened and fragrant.

Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally.

Deglaze the pan with white wine, stirring well to loosen any browned bits. Let it simmer for 2-3 minutes to slightly reduce.

Add in the fish or chicken broth and simmer for about 5-6 minutes or until all the tomatoes releases the juices.
