Serves: 2

Cook time: 15 min

Difficulty: easy
Ingredients

- 1 pound cremini or champignon mushrooms
- 2 tablespoons olive oil
- 3 tablespoons 9% vinegar
- 10 black peppercorns
- 1 teaspoon sugar
- 2 bay leaves
- 2 garlic cloves
- 1/4 cup (60 ml) water
- 1 teaspoon salt
- Juice of half a lime
Step-by-step
1
Start by cleaning the mushrooms. Wipe them down with a damp cloth or paper towel to remove any dirt. Trim the stems if necessary. You can either leave them whole or slice them into halves or quarters, depending on your preference.

2
In a saucepan, combine the olive oil, vinegar, water, sugar, salt, lime juice, the black pepper, bay leaves, and minced garlic cloves. Stir everything together over medium heat until the sugar and salt dissolve completely.

3
Once the liquid has come together, add the mushrooms and let them simmer for about 5 minutes to allow the flavors to meld together

4
Let the mushrooms sit in the marinade until they come to room temperature. After that, cover the bowl or jar and place it in the fridge for at lest 2 hours before serving.

5
Once marinated, the mushrooms are ready to be served! You can enjoy them as a snack, in salads, or as a side dish.

Notes:
- You can adjust the vinegar and lime juice ratio to suit your taste, depending on how tangy you like your marinated foods.
- The longer you let the mushrooms marinate, the more flavorful they’ll be!
