It’s a flavorful dish that boasts vibrant colors and combines tender chicken with a medley of Mediterranean-inspired ingredients: juicy tomatoes, tangy Kalamata olives, a splash of dry wine, aromatic herbs, and a sprinkle of fresh feta.

Ingredients

  • 4 chicken breasts 
  • 1 cup of cherry tomatoes
  • 1/3 cup of Kalamata olives
  • 1/4 cup of white wine
  • 3 fresh oregano
  • 2 tablespoons of onion, diced
  • 1 garlic clove, minced
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of salt
  • 8 teaspoons of olive oil
  • 2 tablespoons of Feta cheese (optional)
  • 1/4 cup of chicken stock (optional)
  • 1 tablespoon of arugula micros
    (you may replace arugula micros with any preferred herbs, like basil for example)

Step-by-step

Start by seasoning 4 chicken breasts with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Heat 4 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side, or until cooked through.

Remove the chicken from the pan, add the rest of the olive oil, onion, garlic, and stir for about 1-2 minutes, then add the wine.

Once the wine reduces slightly, add the cherry tomatoes stirring for another 2-3 minutes.

Next, return the chicken back to the skillet, add the Kalamata olives, fresh oregano, and a pinch of salt. If you prefer a juicier plate, feel free to add 1/4 cup of chicken stock. Cover the skillet, and cook for another 5 minutes at a medium-low heat.

Garnish with fresh arugula micro-greens or your preferred herbs. Optionally, sprinkle the crumbled feta cheese over the chicken before serving.
