Ingredients

- 1 pound Sole fish
- 1 cup cocktail or cherry tomatoes, halved
- 3 garlic cloves, minced
- 1/2 cup white wine
- 3/4 cup heavy whipping cream
- 2 tablespoons butter
- 1 tablespoon garlic powder
- 1 teaspoon lemon zest
- 1 cup flour
- Fresh oregano
- Parsley for garnish, chopped
- Salt, to taste
- Pepper, to taste
- Vegetable oil for cooking
Step-by-step
1
Season the sole fish fillets with salt, pepper, and garlic powder on both sides.

2
Coat the fish fillets in flour and cook in a large preheated pan with vegetable oil for about 2-3 minutes on each side until golden brown. Once all the fillets are cooked, set them aside on a plate.

3
In the same pan, add the butter and minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.

4
Add the white wine and simmer for about 2 minutes, allowing it to reduce slightly.

5
Add the halved cocktail tomatoes and cook for another 2-3 minutes until they start to soften.

6
Pour in the heavy cream, season with salt and pepper, and stir to combine.

7
Return the cooked sole fish fillets to the pan, nestling them into the creamy tomato sauce. Add the fresh oregano, then cover the pan and let the fillets heat through for about 2 minutes.

8
Garnish with lemon zest and freshly chopped parsley. Serve the sole fish hot with jasmine rice or mashed potatoes.
