Ingredients

For cake
- 200g chocolate, melted
- 100g heavy whipping cream
- 30g butter, melted
- 5 eggs
- 100g almond flour
- 75g cornstarch
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
For Chocolate Ganache
- 150g chocolate
- 150g heavy whipping cream
Step-by-step

Start preparing the cake by melting the chocolate in a bain-marie.

Use two mixing bowls to separate the egg yolks from the egg whites.

Add the sugar to the egg whites, then use a hand mixer to beat the egg whites until stiff peaks form.

In the bowl with the egg yolks, add the heavy cream, vanilla extract, almond flour, baking powder, and cornstarch. Mix well until all the ingredients are incorporated.

Remove the chocolate from the bain-marie, add the butter at room temperature, and mix well until the chocolate becomes smooth and the butter is completely melted.

Add the chocolate to the egg yolk mixture and mix until all the ingredients are well combined.

Slowly fold the egg whites into the chocolate mixture until well incorporated.

Transfer the batter into a buttered 9-inch springform pan.

Bake in the oven at 375°F (190°C) for 30 minutes.

To prepare the chocolate ganache, warm up the cream, then pour it over the chocolate. Let it sit for about 2 minutes, then mix well until you obtain a creamy and luscious chocolate ganache.
