- 5 cups (600g) flour
- 4 egg yolks
- 1 1/4 cups (280g) butter, room temperature
- 1 3/4 cups (200g) powdered sugar

- 5 tablespoons jam (your choice)

In a large mixing bowl, combine the flour and powdered sugar. Add the lemon zest and mix until evenly distributed.

Add the softened butter to the dry mixture. Use your hands to mix until the mixture resembles fine breadcrumbs.

Incorporate the egg yolks and knead the dough gently until it comes together into a smooth, uniform ball. Be careful not to overwork the dough to ensure tender cookies.
